NEW Spunky Coconut Cookbook

Kelly is the incredibly talented recipe developer, mom and voice behind the blog The Spunky Coconut. On that day Kelly was especially giddy and for good reason, her second cookbook, The Spunky Coconut Grain-Free Baked Goods and Desserts, was just days away from launching.
This morning I got THE call from an elated Kelly giving me the green light to publish this post. Her cookbook had hit the shelves of The Spunky Coconut e-Store and Amazon. I don't know about you, but I have a handful of family and friends who will be receiving cookbooks this holiday—this one in particular (we tend to give what we want to receive, ha!). Kelly was kind enough to give me a signed copy of the cookbook last weekend and in the four days I've had this delicious cookbook in my hot little hands I have made:

Kelly photographs and designs her cookbooks, front to back, inside and out. She self-publishes through their family press, Apidae Press, with her husband Andrew (an author and designer). Their books are printed on demand here in the USA. This means that they are printed one at a time, as they are ordered, as opposed to a big print run of thousands of books.

Oh my goodness, those coyote cookie bars look amazing! I am trying very hard to cut back on my use of traditional flours, since they make me feel ill, but I LOVE to bake! This would be an amazing resource to have.

I oh so want this cookbook! I love Kelly's recipes, and while I don't do the stevia thing very much I'm almost always able to easily adapt her recipes to the sweeteners that I prefer.

My daughter with autism is dong so much better casein and gluten free. We are moving towards no grain -yes! Coconut and almond flours-love, love, love. We are having an almost grain free thanksgiving. Only grain is our stuffing of quinoa.
I always thought eating gluten-free sugar-free would be tasteless and boring. It wasn't until I found Kelly's website of The Spunky Coconut with all her yummy treats that I enjoy being gluten & sugar free! Even my husband can't get enough of them!

We've been dealing with allergy issues for some time now. We had my third child tested,but didn't get anywhere. I continued to not give her eggs, but it wasn't until our fourth child (almost 4 months) that I figured out we were dealing with a gluten allergy too. I removed practically everything out of my diet to figure out what my poor baby is allergic too. I need to widen our menu options as the kids and I are getting tired of having the same thing over and over again. A cookbook would really help me get started on this journey. At times I feel overwhelmed and discouraged. Thanks for your blog and giveaway!
I would love a chance to win this cookbook. After suffering with stomach issues for over 30 years and severe joint issues for over 23 years, I finally got a doctor that would listen to me. He referred me to a nutritionist and after doing a total elimination diet for 3 weeks, I have spent the last 3 weeks doing the challenge phase. In addition to issues with gluten, I reacted to lactose, casein, soy, eggs, nightshades, citrus, and a few others. I am so thankful for all of the help that is available online because this is definitely overwhelming. Thanks so much for the chance to win the cookbook!
