Lemony Vinaigrette Dressing & Join a CSA

I've never been good at making fancy salads—you know, the kind with tasty combinations of cheeses, nuts, vegetables and fruit. It's an art I never acquired. But, ha! I've finally come up with a salad that I love. It's not over-the-top—just a simple mixture of baby arugula, red onion, sweet peppers and this Lemony Vinaigrette Dressing. It's become my go-to salad. It's simple enough to pair with a pepperoni pizza yet elegant enough to be the opening act for a gourmet meal.

Lemony Vinaigrette Dressing

Gluten-Free | Casein-Free | Corn-Free | Dairy-Free | Egg-Free | Fish-Free | Nightshade-Free | Peanut-Free | Potato-Free | Rice-Free | Shellfish-Free | Soy-Free | Tree Nut-Free | Wheat-Free | Grain-Free | Sesame-Free | Yeast-free | GFCF | Vegetarian | Vegan | Raw

Serves:  Makes about 2 cups
Prep Time:  5 minutes

Ingredients:

1/2 cup fresh LEMON JUICE
2 tablespoons BALSAMIC VINEGAR
2 large GARLIC CLOVES
1 tablespoon DIJON MUSTARD
1 tablespoon dried ITALIAN HERBS
3 tablespoons runny HONEY
1/4 teaspoon SEA SALT
1 cup extra virgin OLIVE OIL

Directions:

1. In blender, blend all ingredients until smooth.

2. With blender speed set to low, slowly drizzle in olive oil.

3. Toss with a mixture of baby arugula, thinly sliced red onion and sweet peppers.

So easy!

Hey Lex - I love new dressing recipes, I am always on the hunt for one. I will definitely try this next time we make a salad. I tend to get bored with salads, which prevents me from eating more greens. I know, I know. Eat my greens. You're helping me :) And I've been meaning to tell you that I got a BLENDTEC. Holy change my life.

OMG, should I have this for dinner tonight? Or the pancakes at www.alisacooks.com? Oh dear. So many choices!!! This dressing is right up my alley. I think you could add some grilled shrimp or tofu and have a meal! Thank you Lexie!

Ooh! This dressing sounds divine! Since I am growing a bunch of different greens right now I have been playing around with a bunch of dressings. I have one that hubby loves that has juice of lemons and parm cheese among other things, but this one sounds divine. My neighbor behind us has an acre full of citrus trees and will always leave a bag-full of it on my back wall for us! I will totally make this dressing since I have a pile of his lemons on my counter!!! ;)

There's nothing better than homemade dressing. I haven't bought a pre-made version in years. Love the idea of lemon and balsamic vinegar. I'll try that. And I can't wait for our CSA to start! I miss it so much in the off season.
