Carrot Cake Smoothie | Dairy-Free 

My husband's love for carrot cake and my son's abhorrence of most vegetables, in their natural form, inspired this smoothie.The little one in our house that eats everything just will not eat most vegetables in their natural form. That's not to say we don't to try, beg, plead. To date we've conquered his aversion to broccoli trees, green beans and cannonball peas. For the rest, well, we rely on smoothies. You can hide A LOT in them. Today I served up carrot cake in a glass. It won his "mmmmm." Will it win yours?

Carrot Cake Smoothie

Gluten-Free | Casein-Free | Corn-Free | Dairy-Free | Egg-Free | Fish-Free | Nightshade-Free | Peanut-Free | Potato-Free | Rice-Free | Shellfish-Free | Soy-Free | Wheat-Free | Grain-Free | Sesame-Free | Easily Sweetener-Free | Yeast-free | GFCF | Vegetarian | Vegan

Serves:  1-2
Active Time:  3 minutes

Ingredients:

1 large handful roughly chopped raw CARROT
1 small handful raw WALNUTS
2 cups non-dairy MILK (today I used unsweetened So Delicious® Coconut Milk Beverage)
1/4 teaspoon CINNAMON (or to taste)
1 tablespoon LEMON JUICE
Pinch of SALT
Sweeten to taste with your favorite SWEETENER (I use 10 drops of stevia concetrate)
1 cup ICE CUBES (or more if you like super frosty smoothies)

Directions:

Blend all ingredients in a high-powered blender (I use a Blendtec), except ice, until super smooth. Add ice and blend until smooth.

I was excited to see this post and glad to know I'm not alone in having a little one that is averse to veggies. I'll take whatever tips you've got. Mine will only eat carrots and corn and on a really good day, green beans. Everything else is out. I continue to put the other veggies on his plate even if all he ends up doing is playing with them.

Does feeding my hubby count? ;) I also loved making up a carrot cake smoothie (though I put more stuff in mine--no kids to fool at our house!). The color of your smoothie is just beautiful--and I love how the mat is refected on the glass. What a great way to start the morning.

This smoothie looks really delicious! I have two boys who also have an aversion to many veggies. Getting them involved in planting our own food garden has helped a bit -- somehow they're a little more willing to eat veggies they had a part in growing. We also like to bake things like zucchini and carrots into healthy muffins -- they get gobbled up that way! :)

Try giving kids a variety of natural foods at every meal. The less sweet foods they get, the more they will like vegetables.

We are SO on the same wavelength! Last week I whipped up my own version of a carrot cake smoothie. What is neat is how different our two versions are! I love seeing different recipe takes on the same concept.

Good for you! I love your attitude, Alexa. Your family is lucky to have you! I had my power greens (baby chard, spinach, etc.), zucchini, celery and pear smoothie this morning, but carrots are a favorite of mine as well. I love the sweetness carrots add to smoothies. Add in walnuts and yes, carrot-cakey goodness!

But, I'm thrilled you had that link to celery root fries on this post. OMG, those look amazing and something I've never thought to do. You're brilliant, girl!

Using a food processor, I finely chop up a tub of raw carrot, celery, broccoli or whatever. I sprinkle this onto everything: over the sauce on pizza crusts, in taco filling, in smoothies, into omelettes, soups, literally everything. It's so finely chopped it's completly disguised!
